Bought a nice piece of pork belly from The Butchery in Bermondsey today, a cut I buy quite a lot. The quality can vary enormously, particularly noticeable with the crackling. A tip here is to use a hairdryer for 5 - 10 mins on the skin before cooking, make sure not to cut into the fat when scoring and rub a good bit of salt in. Superb. Check this place out on a Saturday if you are in the area, the beef selections in particular are beautifully matured. have a piece of shin I’m going to cook tomorrow.
